Comfort Foods To Cure What Ails You!

I don’t get sick too often…I think I get exposed to enough of whatever’s going around when I’m at work at the hospital that my immune system has built up a pretty good resistance!  Thank goodness, because on the rare occasion that I do get sick, I’m not a very patient patient!  This past week however, what I thought was just a little hay fever, ended up turning into a head cold!  Ugh!  (Even cold prevention lozenges didn’t do too much to ease my desire to extricate my head for a few days!)  In the achy haze of my stuffed up sinuses, I found myself in dire need of the comforting effects of my mom’s baked custard and French bread cinnamon toast; her take on chicken soup for the soul, or whatever might be ailing you.

I don’t pretend to understand the psychology behind the relationship we have with certain foods and how it coincides with our emotional wellbeing, I just know there seems to be a direct correlation!  Bake custard is my “warm fuzzy” in life when I’m not feeling up to par!  My mom’s baked custard was also a good way to offset the nasty taste of the medicine we took back then  (There were no fancy flavored cough syrups in those days!)  I’ve carried on some of the same comfort food traditions with my own family.  I can still remember when my two younger children had such bad cases of chicken pox that sores even lined their throats–warm custard was all they seemed to want to eat.

My mom wasn’t a fancy cook, she just made good, simple recipes, most of which were her version of ones she got from her favorite cookbook, including her baked custard.  I was given a cookbook of my own when I got married.  (Sort of a funny, coincidental footnote–on one of my first dates with my husband, he made a beautiful dinner for me and this very same cookbook was opened on his kitchen counter when we arrived at his apartment!  Yes, it was a very “voodoo” moment!  Ha!)

Better Homes and Garden Reipe Book  www.mytributejournal.comJust like my mom’s cookbook, mine is filled with recipe copies from friends, as well as some clipped from newspapers and magazines that I need to copy onto cards and organize.  Maybe I subconsciously do this to somehow emulate my mom–now there’s psychology for you!  I know, not really a good excuse–please tell me that some of you have some overflowing cook books that you are going to organize some day!

I love that the recipe for this baked custard is filed under the title of “Desserts”!  One recipe makes enough for four nice servings.  I used to double the recipe for my family of five and baked the custard in a covered, medium-sized casserole dish.

BAKED CUSTARD

3 eggs slightly beaten

1/4 cup sugar

2 cups milk

1/2 tsp. vanilla

Combine eggs, sugar, and 1/4 tsp. salt.  Whisk milk gradually in to egg mixture.  Add vanilla.  Grind fresh nutmeg on top before baking.  Fill 4-6 medium-sized custard bowls (ramekins work well too) then set in a shallow baking dish filled with hot water about one inch deep.  Bake at 325 degrees for 40-45 minutes.  Bake the large casserole dish for 60 minutes.  The custard should be slightly brown around the edges.  My mom taught me that a good way to make sure the custard is done, but not curdled from baking too long, is to very gently move the dishes back and forth and if the custard moves just slightly in the center, it’s done.  You can also insert a knife about halfway between the middle and edge of the custard, when the knife comes out clean, the custard is done.  It’s so good!

Baked Custard!  www.mytributejournal.comI just use a glass baking dish filled with some water.  I think the reason behind baking the custard this way is to keep the milk from curdling or the custard from shrinking away from the edges because it gets baked too fast.  I do cheesecakes this way too.

Wallah!!  This also makes a good supper for a lazy night when you just want something light!  My mom made bread quite often, but she always bought fresh French bread at the store and used it to make cinnamon toast.  Of course, I think it’s the perfect thing to go along with the baked custard!

Also, since my husband and I are in this “empty nest” stage of life, we’re finding that you can become a bit complacent when making dinner.  We decided it was a good idea to purchase a few new place settings that are just for the two of us!  We switch it up and mix and match the dishes sometimes, and even add flowers on occasion…whatever works to add a personal touch and make meal time a little more special as we sit down together!

The phrase, “The Future Is Bright” was emblazoned in bold letters across a bulletin board in my son’s bedroom while he completed his pre-dental courses in college.  I watched Jake’s determination and sometimes sheer grit as he strived to do well in his classes and seemingly endless labs required for his chosen field of study.  But just like so many others trying to achieve their goals in life, my son recognized that his success would be determined, in large part, by his ability to take responsibility for his own personal accountability!  Most often, doing this requires hard work and putting forth our best efforts in order to help make our futures bright!

Considering the latest tragedy and senseless loss of lives in Washington, DC, as well as the devastation of the Colorado floods, it seems that sometimes, despite our best efforts to be considerate, hard-working human beings, we can’t help but feel somewhat vulnerable to the disparities of mankind and the unpredictability of mother nature!  In these situations, hope and trust can most certainly elude our personal convictions!

As a maternity nurse, I’m fortunate to be able to witness, almost on a daily basis, the hopeful, yet protective gazes of loving parents as they welcome their new babies into the world, practically willing, if they could, a perfect future for them!  I also see the innocent looks of anticipation in the eyes of my granddaughters, and other sweet children, as they eagerly approach so many new experiences in their young lives that will surely add up to creating the brightest of futures for them!

This classic poem by Shel Silverstein, in the book “Where The Sidewalk Ends” used to be tacked to a bulletin board in our playroom when my three children were younger.

The message is very simplistic, but it also serves to preserve my hope for the future–which is in sore need of a supportive gesture now!  It also gives me better faith that there truly are great things ahead for future generations…including those of my children and grandchildren!

My daughter had an early morning meeting at work yesterday, so I had the opportunity to take my oldest granddaughter to kindergarten.  What a fun experience to witness the energy and happiness of all the children on the playground!

The delightful faces of these children lined up for kindergarten on a beautiful morning, reaffirmed in my mind, the need for us to always try and work better together to assure that their futures are bright!

What I’m learning now is…

When my parents moved to the city from our small hometown in the country, so that my father could be closer to the college campus where he taught, one of the things my dad loved most about our new home was that it was across the street from an elementary school–he often said that listening to the children playing at recess was one of the things that kept him so young at heart!  What I’m learning now is that in spite of tragedy and things beyond our control, we still need to believe that we can make a difference and work together to maintain the strength and integrity of our core values so that the future of our posterity will be nothing but bright!

The look of anticipation on my sweet granddaughter’s face as she waited for her school to start, truly touched my heart and renewed my firm desire to always try and do the things that would assure a bright future for her and other children!

This is a picture of a picture that my son sent me when he lived in upstate New York.  Although the quality isn’t the best, the message is clear and seems all too appropriate for such times as these, while we once again try to buoy ourselves up and remember what’s really most important in looking forward to bright futures!

Like I’ve said before, there’s nothing quite like watching your own children being parents!  I also remember how it tugged at my heartstrings to leave my children.  We were excited however, to have our granddaughters stay with us for a couple of days, and Malia knew she would be busy providing Shane support during his bike competition last weekend!

I had gotten the girls these Minnie Mouse suitcases in anticipation of their upcoming sleepover.  They had all sorts of special treasures stockpiled in them!

Ever since going there for her mom’s birthday, Makena wanted to go back to the Spaghetti Factory and sit inside the big trolley in the middle of the restaurant!  (Without even reminding the girls, they remembered their “restaurant” manners!)

My husband always used to say that he slept the best when our kids were all under our roof and asleep in their beds!  Since that hasn’t happened in a while now, he was able to get some really good sleep with Makena and Marli sleeping over!

There was an Uncle Jasper, an Aunt Edna and a rascal cousin Kipper among the crazy characters in Makena and grandpa’s story!  Too funny!  If you want to see imagination at its best–I strongly suggest this activity!

Makena made up a story about this picture titled “The Gum Drop Balloon”! 

The balloon would drop gum drops and treats to all the children who didn’t have any!  I’m not kidding, I was about in tears!  Our children and grandchildren have bigger hearts than we can ever imagine!
